When I try to update to the latest version I get the following error. I tried increasing the execution time limit, but still not updating to the latest version

You can update manually instead. Download this file: https://github.com/pressbooks/pressbooks/releases/download/5.5.1/pressbooks-5.5.1.zip
Unzip it, and replace the pressbooks folder in /plugins/ on your server.
