The latest builds of Prince now have support for CSS variables:

Thanks @t.dumm – we saw this and were very excited about it. Here’s the relevant GitHub ticket if you’d like to track our progress on it: https://github.com/pressbooks/pressbooks-book/issues/624. We currently committed to other projects, but hope to be able to turn our attention to this some day.
