Do we have access to see numbers of downloads or views or something like that? I have people sometimes contact me who are using my textbook, but I would like to be able to report to admin or colleagues some numbers or data.

If you have Google Analytics configured for your network, book file downloads should be logged as events. You can also set up Matomo (formerly Piwik) but that requires some additional configuration. WP PB option - Pressbooks Stats 1.6.3 - minimal stats but useful.
WP option - https://wordpress.org/plugins/wp-slimstat/ - includes shortcodes for real-time web presentation; alternative to others such as WP Matomo beta and Google Analytics.
